GROW REGION:
Located in Ethiopia's Southern Guji Zone, the farmers who deliver to the Dogo Sodu mill cultivate coffee in high-altitude zones ranging from 1,900 to 2,200 meters above sea level. At the Dogo Sodu site, farmers are paid a premium to deliver only ripe cherries, ensuring selective harvesting is employed before the coffee even arrives at the mill.

HARVEST PROCESS:
This is a dry-process (natural) coffee. Both dry and wet processes begin the same way: the whole cherries are floated in water to remove underripe fruit (unripe cherries float, while ripe ones sink). In the dry process, the cherries go straight to drying tables with the fruit still intact. This method takes longer to dry, and the fermentation that occurs inside the cherry impacts the flavor—often imparting fruitier notes, boosting body, and rounding off acidity.
