GROW REGION:
The Nariño-Aponte coffee region in Colombia is renowned for its high-altitude coffee farms, nestled in the rugged Andes mountains near the Ecuadorian border. This region benefits from a unique microclimate, volcanic soils, and elevations reaching over 2,000 meters, all of which contribute to the exceptional quality of its coffee. The area is also known for its strong indigenous heritage, with many smallholder farmers from the Inga community using traditional, sustainable farming practices.
HARVEST PROCESS:
The Colombian honey process is a coffee processing method that lies between the washed and natural methods. In this technique, the coffee cherries are de-pulped, but some of the sticky mucilage (the “honey”) is left on the beans during drying. This process enhances sweetness and body, often resulting in a cup with rich fruity notes, a syrupy mouthfeel, and balanced acidity. It's a meticulous method that requires careful drying to prevent fermentation, showcasing both the bean's origin and added complexity from the process.
