DESCRIPTION:
Caramel with creamy nut accents, hints of vanilla and dried plum, with a full body, low acidity, and a bittersweet finish. A classic Brazilian offering with a smooth, savory cup. Its low acidity and creamy cocoa and nut accents make it an excellent choice for a rich black coffee or a perfect base that pairs beautifully with milk.
GROW REGION:
The Cerrado region of Brazil lies in the southwest of Minas Gerais. The land is relatively flat, with altitudes ranging from 900 to 1,250 meters above sea level, allowing farmers to practice mechanical harvesting — an advantage out of reach for farms on steep hillsides. The region is a vast tropical and subtropical biome encompassing forests, marshlands, and grasslands. Covering roughly 21% of Brazil, it is the largest savannah in South America and one of the most biodiverse ecoregions on earth, home to approximately 5% of all species on the planet.
HARVEST PROCESS:
Cerrado's natural process involves drying whole coffee cherries under the sun on large patios for 20–35 days, allowing the fruit's sugars to slowly infuse the bean before hulling. This produces sweet, full-bodied coffees with notes of chocolate and dried fruit.
